If you don't trust your ears you're going to have to practice using them and learn to trust them because ultimately that's the only tool you have that can help you judge what needs to be done, what it sounds like to use the compressor a certain way, and how well it works for the song. Seriously to answer your question though: you need to do it and use your ears.
Ultimately what you should be doing is what david said ^^^^. i don't even understand what you're wanting to sidechain to do this? when only one is playing it shouldn't be doing anything. then when both are playing it will reduce the volume.
make sure auto gain is off and make sure the limiter is off. if you set your parameters correctly it won't compress (reduce the volume) unless both guitars are playing and making the signal go above the threshold.
set your threshold and ratio (with no make up gain) so that the compressor only starts to work when both guitars play. why don't you want to do this? but ultimately what you should be doing is what david said ^^^^. it would take two seconds to just automate the gain. and really, makes no sense if you're going to sidechain each one to the other one. using some sort of sidechaining method to do this seems dumb if you ask me. you want each guitar to be sidechained to the other guitar so that they both get turned down on that one part? just insert a gain plugin on each track with the desired amount of reduction in gain, bypass it until the section that gets too loud, then un-bypass it at that section. but what you're wanting to do really makes no sense. but if you don't have make up gain on it, it's just adjusting the volume. its making stuff quieter and then bringing the rest up. the make up gain is where the compression comes in. From my understanding, using a compressor without using the make up gain, is just like volume automation.
